Is it possible to hook up the original Xbox to a Media Center PC or LCD monitor and play Xbox games?

Yes, assuming that your media center pc has tv inputs. I use regular old XP with an Aver TV card and have no problem using my xbox on it.
try asking on Windows Live QnA, they have lots of experts on the xbox and xbox 360. it’s a great site, you should try it.
